Student Stories: How I Opened My Own Restaurant During COVID-19 After Being a Student in Australia (Part 1)

To taste locally roasted high-quality coffee, delicious breakfast and brunch in Adelaide, you can go to S’s Café & Kitchen in Prospect.

Owned by Alliance College’s Cookery and Hospitality graduate, Patrick So, someone who always pursues to provide customers with fulfilling experiences.

Patrick has quite an experience in the hospitality industry. He has worked in this industry for 16 years before he went to Alliance College to study Certificate IV in Commercial Cookery and Diploma of Hospitality. He has helped different companies to build up their brand in China and Singapore, but he decided to make some changes.

“I really wanted to build my own brand.” Patrick said. “I was always searching for a good location, with a good feeling, I searched half year to 9 months before I opened this restaurant.”

“Opening a restaurant during the COVID-19 situation is a lot of challenges, especially after the Delta variant, but I made it through. More importantly, in my country, I  already had connections with people who knew all the different types of higher-quality ingredients. But in Australia, I had to learn from zero. That’s why I asked my teachers for help, and they gave me a lot of advice.”

Before you open a restaurant in Australia, you need to have good knowledge of management, food handling, and standard of hygiene. It’s important to get all the licenses, according to Patrick.

“Alliance College also taught me to be patient, I used always to get angry when someone’s not hitting my target and standard. But in college, chefs taught me to calm down and slow down. Patience is essential for me to manage my business.”

Patrick also owns a food truck called S’s Deli. He attends many events in Adelaide. Check out this link if you’re interested: https://www.facebook.com/ssdeliau
